Sweet Potato Skillet with Sauteed Vegetables

Ingredients

BASIC INGREDIENTS

Olive Oil or butter 1-2 sweet potatoes, diced, sliced, or cubed ½ cup onion, chopped or sliced. Salt and Pepper to taste


OPTIONAL INGREDIENTS Mix them up, you choose what you like!

Diced or crumbled chicken sausage 1 can of beans: garbanzo (my favorite), black, great northern, pinto 1-2 carrots ½ head of broccoli, diced small ½ -1 cup butternut squash 1 zucchini, halved the long way then sliced. ½-cup diced cauliflower, fresh leafed kale


OPTIONAL SEASONINGS

Italian, Cumin and Coriander, Garam Masala and Oregano, Paprika and Garlic Powder, Red pepper flakes for spicy variant

Preparation

To begin, heat a large skillet over medium-high heat and then add either butter or olive oil. If you are including meat, cook the meat initially and once fully cooked, transfer it to a plate.


Add the sweet potatoes to the pan and toss in oil.  Season generously with salt and pepper.  Next, add the onions and toss quickly. Sauté and stir for about 5 minutes, until the potatoes have lightly browned and the onions soften. Meanwhile, chop the vegetables and add to the pan and stir. 


If using, include beans or cooked meat. Add your preferred seasonings. Cook for a few more minutes. Reduce the heat to medium-low. Pour in a bit of water or chicken broth and cover with a lid to complete the cooking process. Potatoes and vegetables will be tender when ready.
