Sausage Rustica Pasta

Ingredients

  • 1 lb pre-cooked sausage, preferably chicken linked sausages

  • 1/2 sliced yellow onion

  • 1/2-1 cup sliced red bell peppers

  • 1-2 cloves garlic, minced

  • Tomato sauce (homemade or jarred)

  • Oregano, thyme, basil seasoning

  • salt and pepper

  • 1 package of dried pasta


Preparation

  1. Bring a pot of water to a boil for the pasta. When the water is boiling, add the pasta and cook according to package directions.

  2. Slice the sausage and onions and sauté in olive oil or butter in a large pan until the onions become soft and translucent, about 5 minutes. Add the sliced red bell peppers and garlic and toss for another minute, careful not to overcook the bell peppers. Add your tomato sauce and season to taste and let simmer for 5-20 minutes to help meld the flavors. (You can always add a small splash of red wine to the sauce--it'll give it a nice rich flavor)

  3. You can either mix the cooked and drain pasta to the sauce or plate the pasta and dollop the sauce over the pasta on the plate!
